Prepare your pancakes and gather all other ingredients. Place hot chocolate sauce and sprinkles in individual shallow bowls.

Dip the edges of each pancake in the hot chocolate sauce and then into the sprinkles. Place each in a taco holder or wedge them next to one another in a small casserole dish. Put 2 scoops of Ben & Jerry’s Cookie Dough ice cream into each pancake taco.
